Agave nectar mixes well on its own and is called for directly in cocktail recipes like the Oaxaca Old Fashioned. The only reason to make Agave syrup is to cut the sweetness to match with other syrups, for instance to make Dale DeGroff's Triple Syrup.
I appreciate your comment. I feel there are different applications. Some cocktails call for it raw as you explained. Other applications like in a nightclub where speed matters and every second counts, waiting for a slow pouring agave or honey through a pour spout is just not the right way to go. Sacrifice a little quality to get the drink to the customer faster. Just one persons opinion

I make mine with 1 oz pure dark maple syrup, 3 oz Woodford Reserve double oak, 1 Woodford Reserve bourbon cherry and 3 dashes bitters. Stir lightly, no ice.

Every old fashioned is the best cocktail I've ever had. Love experimenting with the sugars, whiskies, and garnish. Been really focused lately on smoking my own garnish and simple syrups.

I feel these aren’t practical in bartending… on that is is… instead putting a hawthorn strainer on your tin and straining through a fine strainer into a glass. Just put the small tin in the but tin, hold down the tin with your finger and strain into fine strainer.
Or top of the tin with crushed ice and you don’t have to fine strain at all. 😮
